INTRODUCTION

This chapter deals with language in Europe. If there is one issue as deeply personal as food it is language and dialect. The tongues we use are part of our identity, our racial, religious and political sense of self and our gender, our class, our age and our ambitions are embodied and made public in our speech and our writing.
