ABSTRACT

There is abundant evidence that the nature and extent of current practices for the production and consumption of food from animals (in this case, cattle) are unhealthy, unsustainable and, in many respects, unethical. However, the aim of this chapter and this book is not simply to add to the chorus of those who cry havoc but to review the evidence, from this draw attention to the major problems but also seek solutions through strategies based on the principles of good husbandry. These may be categorised as efficiency in the use of resources, compassion for the animals and farmers involved in livestock production and sympathetic stewardship of the living environment. Caring passionately about animals and their welfare is easy. Caring for them properly requires a great deal of knowledge and understanding.
