ABSTRACT

Food has been a lot in the news. Perhaps, like me, some of you have gobbled up a recent eye-opening and horrifying exposé, Eric Schlosser's Fast Food Nation, about the creation of the fast food industry and its sad consequences for workers, animals, consumers, and the environment. Being of a historical bent, I followed that with the 1975 book that Schlosser said inspired him, Eat Your Heart Out: How Food Profiteers Victimize the Consumer, by Jim Hightower, the left-wing politician and commentator from Texas.
